I'd seen the no-cooking variant of relish, but I was shooting for something like Dickinson's Premium, a jarred relish that was hugely popular last year, and my best recollection was that it was likely to have been cooked.
(For all that there was a cup of sugar in this, it still seemed wicked tart to me.)
