the pattern for the crane is widely available; in fact, it's almost always included with pre-packaged commercial origami paper (especially that sold by aitoh). however, the pattern is also widely available online; here's a link i think is particularly useful, since it has pictures of each step.
once i really got folding, i think i figured it took me about 5 minutes per crane. of course, that doesn't factor in the time for cutting the paper, which can be take quite a while. the online paper seller i used to use is now defunct (::sigh::), but i know a new seller, paperjade.com, has some options for origami paper. in fact, it sells packs of 1000 sheets for under $20; see the link below. if the link doesn't work, try the "economy and variety packs" tab at paperjade.com.
the only problem is that the paper is 1) rather luridly rainbow colored and 2) very cheap. for your cranes, i used a mix of foil, which is usually pretty inexpensive and comes pre-cut in small sizes, and different sorts of washi, which i cut into 2-inch squares. washi isn't cheap, but it's nice and it folds well, and you can get 9 2-inch squares out of a 6-inch sheet, so it ends up being cost effective if a bit labor intensive.
as kind of a side note, i found some interesting photos of different ways to display a thousand cranes; believe it or not, all of the pictures at the link below are actually composed of cranes mounted inside a frame.
